Chole Bature (Chickpea Gravy & Fried Breads)

Wow wow wow…. What can I say this is my favorite dish. an all time favorite of all Indians in every age bracket…
Prepration Time :: 30 Minutes Cooking Time :: 45 Minutes
Servings :: 4 Portions
:: Ingredients ::
For Chole (Chickpea Curry)
Chick Peas (soaked overnight) :: 250 gms
Tea Bags-3
Tej Pata-2 leaves
Ginger (small)- 1
dalchini powder-1/2 tsp
Bhuna Jeera-1/2 tsp
jeera-1/2 tsp
Kala Namak-1/2 tsp
kasturi Methi-1 tsp
Dhaniya Powder-1 tsp
Red Chilliy Powder-3/4 tsp
Tomato puree-1 cup
Kali Mirch-4
Amchur-1 tsp
Garam Masala-1/2 tsp
Sugar / Jaggery
Pudhina powder- 1/2 tsp
FOR BATURE (Fried Breads)
Maida-2 Cups
Baking Powder-1/2 tsp
Curd-3 tsp
Oil for frying
:: Cooking Process ::
> In a cooker add tea bags and chick peas and cook on high flame then on getting a whistle cook on a low flame 20 minutes
> In a Pan heat oil and add bay leaves, black pepper, dalchini powder to it and cook for 15 secs.
> Now add jeera , dhaniya powder, red chilly powder and tomato puree.
> Cook for 2-3 mins then add kala namak, bhuna jeera,amchur powder,dry pudina powder, garam masala and kasturi meethi.
> Cook till the mixture leaves oil, than add sugar and salt to it.
Now add the boiled chick peas.
> Cook for 3-4 mins and mash(Very Lightly) the chick peas a little to give a little thickness to the gravy.
For Bhature (Fried Breads)
> Mix maida baking powder and oil and knead the flour.
> Divide the dough into small portions
> Roll them like flat breads and then deep fry.
