Ingredients
  1. Bhindi - 500gms [Okra / Lady Finger]
  2. Tomatoes - 2 (Medium) (Finely Chopped)
  3. Green Chillies - 2 (Long)
  4. Ginger - small Sized piece
  5. Haldi - 1/4 tsp [Turmeric Powder]
  6. Chili Powder - 1/4 tsp. [Red Chili Powder]
  7. Amchoor Powder - 1/4 tsp. [Dried Mango Powder]
  8. Garam Masala - 1/4 tsp
  9. Ksturi Methi - 1/2 tsp.
  10. Dhaniya Powder - 1/4 tsp.
  11. Salt to Taste
  12. Oil - 1.5 Tbsp.
Instructions
  1. 1. Slit from Center and cut into 4 pieces, mix chopped tomatoes and ginger to this.
  2. 2. Heat oil in pan and add the tomatoes, ginger and green chillies to it, and mix well and cook for 30 seconds
  3. 3. Add Haldi, Chili powder, Dhaniya Powder and salt; and cook till it leaves oil
  4. 4. Add Bhindi to this and mix well till it is completely coated with masala.
  5. 5. Remove the Bhindi into a Microwave Bowl and keep in the Microwave for 5 minutes
  6. 6. Remove from Microwave add Amchoor powder and mix slightly and cook for 9 minutes in the microwave again
  7. 7. Now remove from microwave and mix the remaining spice and toss well.
  8. Garnish with Dhaniya and Serve hot with Flat Breads or Parathas
Notes
  1. Cut Okra at a slight angle to make it look good.
